Yogurt is one of many types of fermented milk that is consumed around the world.All are prepared by culturing certain lactic acid bacteria found in milk,but the fermented product differs in name taste depending on the of milk used and the type of lactic acid bacteria that accomplish the fermentation .Commercial yogurt in North America is made from cow's milk and is prepared under controlled conditions in two steps,each at a temperature that favors the metabolism and growth of different types of lactic acid bacteria.
In the first step of milk fermentation,the milk is held at 46-48摄氏度 which encourages the growth of Streptococcus thermophilus.This organism rapidly ferments lactose (milk sugar) to lactic acid.Lactose is a disaccharide composed of glucose and galactose which are connected by a glucosidic bond.Lactose is transported into the and the glucosidic bond is broken by the enzyme β-galactosidase .After the lactose is broken into galactose and glucose,both sugars are converted to glucose-6-phosphate.Then,S.thermophilus oxidizes glucose-6-phosphate to lactic acid using the Embden-Meyerhoff-Parnas(EMP) pathway.

Biosafety of transgenic plants is indeed an important issue to be considered.We have conducted the experiment for evaluating the safety of transgenic sweet pepper and tomato collaborating with medical doctors for a year long.Feeding test results show that there are no significant differences on growth rate,food consumption coefficiency,blood systems,function of lives and kidneys,reproductive systems and the metabolism of protein,fat and sugar between rats fed with transgenic food and non-transgenic food.Mutation test again shows no aignificant different,which is similar to many labs findings.Therefore,international collaboration and understanding of the importance of agrobiotechnology are significant.
