Our coconut sugar is made from the sap of comes from coconut palms, which no longer bear coconuts heavily enough and have been retired from production. The sap is boiled at about 212°F, which is about 100°C, to make the coconut sugar. It is not raw. These trees are usually more than 50 years old. It is more sustainable to use these trees for sap production, rather than just cutting them down and replacing them with new trees, and gives the farmer a decent return on investment.
